Comes from the plant known as the Carum carvi, Caraway spice is widely used in variety of culinary dishes as well as personal care products and for health. The seed is usually the fruit produced by the flower of the Carum plant, and is used to add an anise-like flavor to several foods. Most of the time, you will find this herb as a seasoning in Rye breads, it is also used to flavor sauerkraut, Akvavit liquor, havarti cheese and others. With its distinctive aroma, the herb is mainly used in Central and European dishes. The seed has also been used to scent soap and body lotions.

RECIPE

Try this delicious Caraway Seed Cake.

Ingredients:

  • 125g butter, softened at room temperature
  • 175g plain flour
  • 1 tsp baking powder
  • 1/4 tsp ground mace
  • 1/4 tsp ground nutmeg
  • a smidgen of salt
  • 125g caster sugar
  • 2 eggs, whisked
  • 1/2 Tbsp caraway seeds, chopped
  • 1/2 orange zest
  • 40g candied orange peel, chopped
  • 2 Tbsp milk
  • 2 Tbsp Cointreau

Instructions:

  1. Preheat the oven at 180 degrees Celsius.
  2. Into a bowl, sift the flour, baking powder, mace, nutmeg and salt.
  3. In another bowl, cream the butter and caster sugar until light and fluffy. Add the eggs a quarter at a time, beating well after each addition, then beat in the caraway, orange zest and candied peel.
  4. Fold in the flour mixture until just combined, then stir in the milk and Cointreau.
  5. Spoon into a lined tin and bake for 35 minutes, or until a toothpick comes out clean.
  6. Leave in the tin for 10 minutes, then turn out onto a rack to cool completely.
